Sartoria chef patron Francesco Mazzei on The Wine Show

Chef Patron of Sartoria, Francesco Mazzei and The Wine Show team take us to Francesco’s home in Calabria to tell us about his favourite grape and to cook a dish to complement it.

This pudding wine chosen by Franscesco is a Moscato Passito, Cantine Viola, from his Calabria. In the love ‘em or hate ‘em world of pudding wines Th Wine Show team find the wine unashamedly rich, mahogany palate-lacquer of raisins, fruit cake and sweet nuts. A perfect wine to match Francesco’s liver involtini, stuffed with ‘nduja, wrapped in crepenet and served with crushed saffron potatoes.
