Bluebird head chef, Matt Robinson, loves his wine nearly as much as he loves his food and here he flips the classic approach to food and wine matching on its head .
Rather than starting with food and then thinking what wine to drink with it, Chef Matt has put all the emphasis on the wine (quite right too, we say!) and chosen one of his favourite reds, the 2012 John Duval ‘Plexus’ from his native Australia and created a dish that combines with it perfectly.
